Holzapfel, of Newfoundland, was driving along Hilltop Road when his "motor tricycle" overturned on Sunday, July 16, said the Lehigh County Coroner's Office.
The 64-year-old died from multiple traumatic injuries at Lehigh Valley Hospital-Cedar Crest on Wednesday, July 19, the coroner said. His death was ruled accidental.
According to his Facebook, Holzapfel was a Queens, New York native who graduated from Forest Hills High School and went on to study at SUNY Morrisville. He leaves behind three children and a wife.
"I don’t even have words. I am so sorry for your loss," a friend wrote in a comment posted on Holzapfel's daughter's Facebook tribute. "I know how much you adored your dad and how greatly he will be missed."
"Pete was such a great dad, always so proud of you," wrote another. "He will be missed! My heart breaks for your family.
"I’ve gotten pretty close to your father this past year and I don’t think there’s been a time where we got together and he didn’t talk about how proud he was of his children and their accomplishments," said a third.
"Such a good guy and a lot of laughs. I’m really gonna miss him."
